Paleo Spice Pancakes

I have found it! While I desire to be all paleo, I am not willing to suffer through life for it! Healthy eating doesn't have to be nasty. I am not a fan of everything having the texture of either eggs or cardboard, or all my food tasting of coconut. (and I like coconut)

Every now and then I want my carbs (the bad ones), So in an attempt to have them and be healthy I have been playing with pancake mixtures. I have finally found one I am happy with. They even make the little holes like pancakes! I will say, because like most paleo foods they are dense, you have to cook them on a medium heat and take your time to see a golden, cooked all the way through cake. I drizzled with a little maple syrup (which was my only no no here) but honey would be just as good.

I will be making them again this weekend to freeze for quick on hand breakfasts. This batch made 4  medium sized cakes. The plate in the picture is actually my batch, and it's not a saucer…it's a full size dinner plate. The best part is both of my kids loved them :)

Here's your recipe! Enjoy!!

In a bowl combine

  • 1/2 cup almond milk
  • 2 eggs
  • 1/2 cup flax meal
  • 1/4 cup almond meal
  • 1/2 cup pecan halves
  • 1teaspoon cinnamon
  • sprinkle of cloves 
  • sprinkle of all spice
Mix these ingredients with a fork, no need to whip them

Let them sit while you prepare a warm skillet with a tablespoon of avocado oil.
(I only used a tablespoon, but you can add more as needed)

The sitting lets the flax meal expand, and makes the batter kind of a glue texture.
 (sit for 2-3 minutes about the time it takes to ready your pan and refill your coffee ;)

Cook as usual, low-meium heat, don't rush them. They will turn nicely as long as you give them time! You can see the one that got a little dark around the edges, I tried to rush that one. Enjoy topped with real maple syrup or honey….actually even a little grassfed butter would be fine!
